Quick Breakfast Skillet with Sausage, Cheese, and Cherry Tomatoes

Step 1: Prepare the Ingredients
Chop the Meat and Vegetables:
Slice the sausage or meat into small bite-sized pieces. If you’re using pre-cooked meats like ham or sausage, they can go directly into the dish, while raw meats may need to be cooked first.
Finely chop the green onions.
Cut the cherry tomatoes into halves or quarters depending on their size.
Grate or finely chop the cheese.
Step 2: Make the Batter
Whisk the Eggs and Milk:
In a bowl, crack the eggs and whisk them together with 100ml of milk until fully combined.
Add the Flour:
Gradually whisk in 2 tablespoons of flour. Mix until smooth and no lumps remain. The flour helps create a light, fluffy texture in the final dish.
Season the Mixture:
Add salt and ground black pepper to taste. You can start with a pinch of each and adjust to your liking.
Step 3: Cook the Breakfast Skillet
Heat a Pan:
Heat a non-stick skillet over medium heat. Add a small amount of oil or butter to lightly grease the pan.
Add the Meat and Green Onions:
Add the chopped sausage or meat to the heated pan and cook for about 2-3 minutes until it begins to brown and becomes fragrant.
Toss in the chopped green onions and sauté for another 1-2 minutes until the onions soften slightly.
Add the Tomatoes:
Add the cherry tomatoes to the pan and sauté for 1 minute, just until they begin to soften. They should still hold their shape but release some of their juices.
Pour in the Egg Mixture:
Reduce the heat to medium-low and pour the egg, milk, and flour mixture over the cooked sausage, onions, and tomatoes. Tilt the pan slightly to ensure the liquid is spread evenly across the surface.
Add the Cheese:
Sprinkle the grated or chopped cheese evenly over the top of the mixture.
Cook Until Set:
Allow the mixture to cook undisturbed for about 3-5 minutes, or until the eggs begin to set around the edges. You can cover the pan with a lid to help the eggs cook evenly.
Finish Cooking:
Once the eggs are mostly set, gently fold the mixture in half (like an omelet) or stir lightly for a scrambled texture. Cook for another 1-2 minutes until the eggs are fully set, and the cheese is melted.
Step 4: Serve the Dish
Serve Hot:
Transfer the skillet to a plate or serve directly from the pan for a rustic presentation. Garnish with extra green onions if desired.
This dish pairs well with toast, fresh greens, or a side of fruit for a complete breakfast.
