3 oranges
1 egg
80 g sugar (about 1/3 cup + 2 tbsp)
8 g vanilla sugar (1 tsp)
1 pinch of salt
80 ml sunflower oil (about 1/3 cup)
150 g vanilla yogurt (about 1/2 cup)
150 g flour (about 1 cup + 1/4 cup)
9 g baking powder (1 tsp)
Apricot jam (for glazing)
Grated coconut (for garnish)
Mint leaves (optional, for garnish)
Instructions

Prepare the Oranges:

Wash the 3 oranges thoroughly with vinegar and baking soda to remove any residues.
Mix the Ingredients: 2. In a mixing bowl, beat 1 egg with 8 g vanilla sugar, 80 g sugar, and a pinch of salt. 3. Add 80 ml sunflower oil and 150 g vanilla yogurt to the mixture. Stir well. 4. Squeeze the juice from the oranges to make about 80 ml of orange juice. Add the juice to the mixture. 5. Gradually mix in 150 g flour and 9 g baking powder until the batter is smooth.

Prepare the Pan: 6. Butter and flour the muffin or cake pan to prevent sticking.

Bake: 7. Preheat the oven to 175°C (350°F). 8. Pour the batter into the prepared pan. 9. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.

Finish and Serve: 10. Once baked, let the cake cool slightly. 11. Brush the top with apricot jam. 12. Sprinkle grated coconut on top. 13. Garnish with mint leaves if desired.
