1. First, peel the potatoes and cut them into approximately 7 mm thick slices or cubes.
Next, heat the pan (a cast-iron pan is best) to about 70% of its maximum power and leave it on until the pan is hot.

Once they’re well browned, add the garlic, stir, and then immediately sprinkle the cheese over the eggs. Add them to the center, tossing to coat. Season with plenty of paprika, pepper, and salt. Stir briefly again until the eggs are set.
