Ingredients:
4 large potatoes, peeled and grated
1 small onion, finely grated
1 cup cheddar cheese, grated
2 eggs, beaten
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper

Directions:
Prepare the Potatoes:
Place the grated potatoes in a clean cloth or cheesecloth and squeeze out as much liquid as possible. This helps to make the pancakes crispier.
Mix the Ingredients:
In a large mixing bowl, combine the drained potatoes, grated onion, grated cheese, beaten eggs, flour, salt, and pepper. Mix well until everything is thoroughly combined.
Heat the Oil:
Heat a few tablespoons of vegetable oil in a large skillet over medium-high heat. The oil should cover the bottom of the pan and be hot enough to sizzle when a small amount of batter is dropped in.
Cook the Pancakes:
For each pancake, spoon about 1/4 cup of the potato mixture into the skillet, flattening it with the back of the spoon to form a pancake about 1/2 inch thick.
Fry the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy. Be sure to watch them closely to prevent burning.
