Eggs: 2, beaten
Breadcrumbs: 1 cup
Cheese: ¼ cup, grated (for extra crunch)
Paprika: 1 teaspoon
Flour: 4 tablespoons
For the Sauce:
Sour Cream or Yogurt: 3 tablespoons
Dill: Fresh, chopped
Garlic: 1 clove, minced
Salt: To taste
Black Pepper: To taste
Lemon Juice: 1 teaspoon
Directions
Prepare the Potato Mixture:
Peel and chop the potatoes. Place them in a pot with enough water to cover and bring to a boil.
Add the grated carrot and cook until potatoes are soft (about 15 minutes).
Drain and mash with butter, parsley, grated cheese, salt, and black pepper.
Let the mixture cool slightly.
Shape the Potato Sticks:
Take small portions of the mixture and shape into stick-like pieces or cylinders.
Place them on a tray and refrigerate for 15 minutes to firm up.
Prepare the Coating:
In one bowl, beat the eggs.
In another bowl, mix breadcrumbs, paprika, grated cheese, and flour.
Coat the Potato Sticks:
Roll each potato stick in flour, then dip into beaten eggs, and finally coat with the breadcrumb mixture.
Repeat for all sticks, ensuring even coating.
Fry or Bake:
Frying Method: Heat oil in a pan over medium heat. Fry each stick until golden brown (about 3-4 minutes per side).
Baking Method: Preheat the oven to 200°C (400°F). Place the sticks on a parchment-lined tray, spray with oil, and bake for 20-25 minutes, flipping halfway through.
Prepare the Sauce:
In a small bowl, mix sour cream or yogurt minced garlic, chopped dill, salt, black pepper, and lemon juice. Stir well.
Serve:
Serve the crispy potato sticks hot with garlic dill sauce on the side for dipping.
