Crispy Cheddar Chicken

Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with olive oil. If the chicken breasts are thick, consider cutting them in half horizontally to make them thinner and cook more evenly.

In a shallow bowl, combine the crushed cornflakes, shredded cheddar cheese, flour, garlic powder, onion powder, paprika, salt, and pepper. Mix well until everything is evenly distributed.

Dip each chicken breast into the beaten eggs, ensuring it’s fully coated. Then, press the chicken into the cheddar cornflake mixture, making sure it’s coated on both sides. Press down lightly to help the coating stick.

Place the coated chicken breasts on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), and the coating is golden brown and crispy.

Remove the chicken from the oven and let it rest for a few minutes before serving. Serve with your favorite side dishes, such as mashed potatoes, roasted vegetables, or a fresh salad!
