Ingredients for crispy crisps: 500 grams of yellow potatoes, 1 teaspoon of extra virgin olive oil and a pinch of salt.
Clean the potatoes well, peel them and cut them into slices about 5 millimetres thick. Immerse them in cold water for a few minutes (10-15), then drain and place them in a saucepan filled with cold water with a pinch of salt.
These operations will make it possible to remove a little starch from the potatoes, but also to tenderize them before baking in the oven.
When the water starts to boil, remove from the heat, drain and allow to cool. Caution: The potatoes should not boil but should be slightly scalded.
Place the potatoes in a large bowl and add a teaspoon of oil by mixing well with the hands to grease all the potatoes.
To cook crisp crisp crisps, you have two options. The first is to use, if available, the air fryer. The second consists in baking in the oven, at about 220-250 degrees for about 30-40 minutes. Once cooked, turn them around halfway through cooking and wait until they are golden over the entire surface.
