Ingredients:
For the Potatoes:
600 grams (about 4 medium) potatoes, peeled and cubed
1 medium carrot, grated
Water, as needed for boiling
2 tablespoons butter
2 tablespoons chopped fresh parsley
Salt, to taste
Black pepper, to taste
For the Filling:
½ cup (about 50g) shredded hard cheese (cheddar, Monterey Jack, or mozzarella recommended)
For Frying:
Vegetable or canola oil, for frying
Optional Coating:
¼ cup all-purpose flour or cornstarch (for extra crispiness)
Directions:
Prepare the Potatoes: Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a rolling boil over medium-high heat and cook until the potatoes are tender when pierced with a fork (about 15-20 minutes).
Mash the Potatoes: Drain the cooked potatoes thoroughly and return them to the pot. Mash them until smooth and creamy using a potato masher or electric mixer.
Add Flavor and Cheese: Stir in the butter, grated carrot, chopped parsley, salt, and black pepper to the mashed potatoes. Mix well until everything is evenly distributed. Add half of the shredded cheese and mix until melted and incorporated
