Directions
1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
2. In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
3. Gradually add the ice water, mixing just until the dough comes together. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 30 minutes.
4. In a separate bowl, toss the sliced apples with granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Set aside.
5. Roll out one half of the dough on a floured surface to fit the bottom of the prepared baking dish. Place the rolled dough in the dish.
6. Spread the apple mixture evenly over the crust.
7. In a small bowl, combine oats, brown sugar, and melted butter. Sprinkle this mixture over the apples.
8. Roll out the second half of the dough and place it over the apple mixture. Cut slits in the top crust to allow steam to escape.
9. Bake for 45-50 minutes, or until the crust is golden brown and the apples are tender.
10. Allow the bars to cool before cutting into squares.

For a richer flavor, try adding a handful of chopped walnuts or pecans to the oat topping. If you prefer a sweeter filling, mix in a tablespoon of honey with the apples.
