Shrimp, Luffa, and Tofu Soup
Prep Ingredients:
Peel and cut the luffa into thin slices. Dice tofu and clean the shrimp.
Cook Garlic & Luffa:
Heat oil in a pot, sauté garlic until aromatic. Add the luffa and stir until slightly softened.
Simmer Soup:
Add broth to the pot, bring it to a boil, then gently add tofu cubes. Let simmer for 5 minutes.
Add Shrimp & Season:
Stir in the shrimp, cooking until pink. Season with fish sauce, soy sauce, salt, and pepper.
Garnish & Serve:
Top with chopped green onions and cilantro. Serve immediately.
