Ingredients

  • 8 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1/2 cup ripe olives, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons scallion, chopped
  • 1/2 teaspoon garlic powder
  • 4 10-inch flour tortillas
  • Red jalapenos, pickled

Step-by-Step Instructions

  1. In a medium mixing bowl, combine the cream cheese, cheddar cheese, olives, cilantro, scallions, and garlic powder. Mix well until all ingredients are thoroughly blended.
  2. Spread approximately 1/2 cup of the cheese mixture evenly over each tortilla.
  3. Place a row of jalapeno halves lengthwise across the center of each tortilla.
  4. Roll up each tortilla tightly in a jelly roll fashion. Wrap each roll in plastic wrap and refrigerate for at least 2 hours to set.
  5. Once chilled, unwrap the tortillas and slice each roll into 12 pinwheels.
  6. For an extra touch, garnish each pinwheel slice with a dollop of guacamole if desired.
