Loaded Vegan Nachos, hands down my favorite meal. RECIPE:
The beans:
1-2 cans of 3 bean mix pinto/blackbean/ red kidney beans rinsed then put into a saucepan with some diced onion, crushed garlic, a spoon or 2 of concentrated tomato paste, 2 tsp cumin, 1 tsp ground coriander, 1 tsp paprika, 1 tsp oregano, salt + pepper to taste, then add enough water to be able to simmer it, till thickens for about 30 minutes.
The cheeze sauce:
1 cup unsalted cashews
1/4 – 1/2 tsp salt
1/4 tsp garlic powder
Juice of half a lemon
2 heaped TBSP of nutritional yeast
Blend in a high speed blender with a bit of water till smooth.
Fresh Salsa:
Diced red onion
Diced tomatoes
