Ingredients:
5 boneless chicken legs (300g)
Salt, to taste
Black pepper, to taste
1 tsp oregano
1.5 tbsp wheat flour (or cornstarch)
3 tbsp cooking oil
1 tbsp unsalted butter (20g)
2 small potatoes (300g), cubed
1 onion (170g), chopped
Half a carrot (170g), chopped
1 tbsp chopped garlic (14g)
For the Sauce:
2.5 tbsp honey (36g)
1 tbsp honey mustard (14g)
4 tbsp sweet chili sauce (70g)
3 tbsp soy sauce (24g)
1 tbsp lemon juice (8g)
Directions:
Preheat the oven to 200°C (390°F).
Season the chicken legs with salt, black pepper, and oregano. Coat them lightly with wheat flour or cornstarch.
Heat the cooking oil and unsalted butter in a large oven-safe pan over medium-high heat.
Sear the chicken legs until golden brown on both sides, about 3-4 minutes per side. Remove from the pan and set aside.
In the same pan, add chopped onion, carrot, and garlic. Sauté until the vegetables are softened.
Return the chicken legs to the pan, nestling them among the vegetables.
In a small bowl, mix together the sauce ingredients and pour over the chicken legs.
Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
Serve the chicken legs and vegetables hot, drizzled with the remaining sauce.
