– 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

– Lemon wedges (for serving)
### Instructions:
#### Step 1: Prepare the Marinade
1. **Mix the Ingredients:** In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, apple cider vinegar, Dijon mustard (if using), salt, pepper, and red pepper flakes. Taste and adjust the seasoning if needed, adding more honey for sweetness or more vinegar for tang.
2. **Marinate the Chicken:** Place the cubed chicken into a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, though marinating for 1-2 hours is ideal to allow the flavors to penetrate the chicken.
#### Step 2: Prepare the Skewers
1. **Soak Wooden Skewers (if using):** If you’re using wooden skewers, soak them in water for 20-30 minutes to prevent them from burning during grilling.
2. **Thread the Chicken:** Once the chicken has marinated, thread the cubes of chicken onto the skewers, making sure to leave a little space between each piece for even cooking.
#### Step 3: Grill the Chicken Skewers
1. **Preheat the Grill:** Preheat your grill to medium-high heat (around 375-400°F). Brush the grill grates with olive oil to prevent sticking.
2. **Grill the Skewers:** Place the chicken skewers on the grill and cook for 4-5 minutes per side, turning occasionally, until the chicken is cooked through and has a nice golden-brown char. The internal temperature of the chicken should reach 165°F (75°C).
3. **Baste with Extra Marinade (optional):** For an extra layer of flavor, you can baste the chicken with the leftover marinade while grilling. Just make sure the marinade has not come into contact with raw chicken to avoid contamination.
Step 4: Serve and Garnish
1. **Remove and Rest:** Once the chicken skewers are done, remove them from the grill and let them rest for a couple of minutes.
2. **Garnish and Serve:** Garnish with freshly chopped parsley and serve with lemon wedges on the side for a burst of fresh citrus. These skewers are perfect on their own or served alongside rice, grilled vegetables, or a light salad.
