Chewy Mochi Pancakes

Inspired by Korean Hotteok

Dough:
* 1 cup glutinous rice flour
* 1 tbsp plain flour
* 1/2 tsp salt
* 1/2 cup boiling water

Filling:
* 1/4 cup brown sugar
* 1/4 cup crushed peanuts

Instructions:

1. Mix the flours and salt. Add boiling water and stir until smooth.

2. Divide dough into 4 pieces. Flatten each, add desired filling, then wrap, and flatten again.

3. Pan-fry on low heat for 5-8 minutes per side until golden.
