Just potatoes and onions! This simple yet delicious recipe is so satisfying that I make it almost every weekend. The combination of tender potatoes, sweet green peas, and gooey cheese wrapped in tortillas is perfect for a quick meal or a tasty snack.
RECIPE:
Ingredients
2 potatoes
Water (for boiling)
Salt, to taste
100g frozen green peas
Green onions, chopped
100g mozzarella cheese, shredded
2 tortillas
Pepper, to taste
50g Parmesan cheese, grated
Directions
Prepare the Potatoes:
Boil the Potatoes:
Peel and chop the potatoes into small cubes.
Place them in a pot of water and add a pinch of salt.
Bring to a boil and cook until the potatoes are tender, about 10-12 minutes.
Drain the water and set the potatoes aside.
Cook the Peas:
In a small pot, boil water and add the frozen green peas.
Cook for 3-5 minutes until tender, then drain and set aside.
Assemble the Filling:
Combine Ingredients:
In a large bowl, combine the boiled potatoes, cooked green peas, and chopped green onions.
Add the shredded mozzarella cheese and mix well.
Season with salt and pepper to taste.
