Ingredients:
2 cups all-purpose flour
2/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg (optional)
2 large eggs
3/4 cup buttermilk (or regular milk with 1 tablespoon lemon juice or vinegar)
2 tablespoons melted butter
1 teaspoon vanilla extract
Oil for frying (vegetable oil works well)
Instructions:
1. Prepare the doughnut batter:
In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg (if using).
In a separate bowl, beat the eggs, then add the buttermilk, melted butter, and vanilla extract. Mix until combined.
Gradually add the wet ingredients into the dry ingredients, stirring until just combined. The dough should be thick but not too stiff.
