For the Base:
2 eggs
50g sugar
125g yogurt (plain or Greek)
8g vanilla sugar (or 1 tsp vanilla extract)
1/2 teaspoon salt
50 ml sunflower oil
Zest of 1 lemon (for a fresh flavor)
420g flour
10g baking powder (for a bit of lift)
For the Apple Filling:
2 apples (peeled, cored, and chopped)
2 tablespoons sugar
1 tablespoon butter
For the Glaze:
1 tablespoon jam (any flavor you like, apricot or strawberry work well)
Additional sugar (optional, for sprinkling on top)
Instructions:
Prepare the Apple Filling:
In a skillet, melt the butter over medium heat.
Add the chopped apples and 2 tablespoons of sugar. Cook until the apples are tender and slightly caramelized, about 5-7 minutes. Set aside to cool.
Prepare the Base:
In a large bowl, whisk together the 2 eggs and 50g of sugar until well combined and slightly frothy.
Stir in the yogurt, vanilla sugar (or extract), salt, and sunflower oil. Mix until smooth.
