Prepare the dough: In a bowl, mix the flour, sugar and salt. Add the cold butter and work the dough with your hands until it has a sandy texture. Add the egg and water, kneading until it forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Prepare the filling: Peel and cut the apples into small cubes. Mix the apples with the raisins, sugar, flour, cinnamon, nutmeg and lemon juice.
Assemble the tart: Preheat the oven to 180°C. Roll out the dough on a floured surface and place it in a tart tin. Pour the apple filling over the dough.
Bake: Bake for 45-50 minutes, or until the dough is golden and the filling is bubbly.
Serve: Allow to cool slightly before serving. You can sprinkle with icing sugar.
Tips:
Dough: For a crumblier dough, you can add a little ground almonds.
Filling: You can add other nuts such as walnuts or hazelnuts to the filling.
Sweetness: Adjust the amount of sugar to your taste.
Thickener: If the filling seems too liquid, you can add a little cornstarch.
