Ingredients
For the cookie base:
1 cup unsalted butter, softened
¾ cup granulated sugar
¾ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
For the cheesecake filling:
8 oz cream cheese, softened
⅓ cup powdered sugar
1 teaspoon vanilla extract
For the strawberry topping:
1 cup freeze-dried strawberries, crushed
½ cup white chocolate chips, melted (optional, for drizzle)
Directions
Prepare the cheesecake filling:
In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
Using a spoon, scoop small portions of the mixture (about 1 teaspoon each) onto a lined baking sheet. Freeze for at least 30 minutes.
