Heat a large skillet or pan over medium heat and add 1 tablespoon of olive oil.
Add the sausages and cook, turning occasionally, until browned on all sides and cooked through (about 12-15 minutes). Remove the sausages from the pan and set aside to rest. Once cooled slightly, slice them into 1-inch pieces.
Sauté the Peppers and Onions:
In the same pan, add the remaining tablespoon of olive oil.
Add the sliced bell peppers and onions, and sauté over medium heat until they begin to soften and caramelize, about 8-10 minutes. Stir occasionally to avoid burning.
Add the minced garlic and cook for another minute until fragrant.
Deglaze and Combine:
Pour in the chicken broth (or white wine) to deglaze the pan, scraping up any bits stuck to the bottom.

Combine Sausage with Peppers and Onions:
Add the sliced sausages back to the pan and stir everything together.
Let everything simmer together for another 5-7 minutes so the flavors meld and the sausages are heated through.
