  1. Cook the pasta: Begin by cooking the pasta according to the package directions. Drain and set aside, reserving 1/2 cup of pasta water for later.
  2. Prepare the chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil and butter over medium-high heat. Once the butter is melted, add the chicken breasts to the pan. Cook for about 6-7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set it aside.
  3. Cook the mushrooms: In the same skillet, add the sliced mushrooms and cook for 4-5 minutes, or until they have released their moisture and browned slightly. Add the minced garlic and cook for an additional 1 minute, until fragrant.
  4. Deglaze the pan with Marsala wine: Pour in the Marsala wine and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the wine simmer for 2-3 minutes to reduce slightly.
  5. Make the creamy sauce: Add the chicken broth to the skillet and stir to combine. Let the sauce simmer for another 3-4 minutes to reduce slightly. Then, stir in the heavy cream and Parmesan cheese (if using), and cook for an additional 2-3 minutes, allowing the sauce to thicken.
  6. Combine the chicken and pasta: Slice the cooked chicken breasts into strips. Add the chicken back into the skillet and stir to coat in the sauce. If the sauce becomes too thick, you can add some of the reserved pasta water to loosen it up. Add the cooked pasta and toss everything together to coat the pasta in the creamy Marsala sauce.
  7. Serve: Plate the pasta and chicken, then garnish with freshly chopped parsley and a little extra Parmesan cheese, if desired.

Tips:

  • Marsala wine: If you’re not familiar with Marsala wine, it’s a fortified wine from Italy. Sweet Marsala is commonly used in dishes like this, but you can use dry Marsala if you prefer a less sweet flavor.
  • Chicken options: You can also use chicken thighs if you prefer dark meat or if you’re looking for a more flavorful option.
  • Vegetarian option: If you’re looking for a vegetarian version, you can substitute the chicken with more mushrooms or even tofu.

This creamy, rich Chicken Marsala Pasta is a perfect weeknight dinner or special occasion dish that combines the flavors of a classic with the comfort of pasta. Enjoy!
