Mix Wet Ingredients: In another bowl, beat the egg and then add the buttermilk mixture and melted butter. Stir until well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently just until combined. Be careful not to overmix; small lumps are perfectly fine.

Preheat the Skillet: Heat a non-stick skillet over medium heat. If needed, lightly grease the skillet with cooking spray or a little butter.

Cook the Pancakes: Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancake and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

Serve: Stack your pancakes on a plate, drizzle with maple syrup, and top with your favorite fruits or additional toppings!
