Here’s how to make it:
Low Carb Sheet Pan Pizza
Ingredients:
For the Low Carb Crust:
1 medium cauliflower head (or 1 package of pre-riced cauliflower)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 large egg
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
Salt and pepper, to taste
For the Toppings:
1/2 cup pizza sauce (preferably sugar-free for low carb)
1 cup shredded mozzarella cheese
Toppings of your choice (e.g., pepperoni, mushrooms, bell peppers, olives, spinach, sausage, etc.)
Fresh basil (optional, for garnish)
Instructions:
1. Prepare the cauliflower crust:
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or a silicone baking mat.
If using a whole cauliflower, remove the leaves and stem, then chop it into florets. Pulse the florets in a food processor until it resembles rice or fine crumbs.
Transfer the riced cauliflower to a microwave-safe bowl and microwave it for 4-5 minutes, until softened. Let it cool slightly. Then, place it in a clean kitchen towel or cheesecloth and wring out any excess moisture.
In a large bowl, combine the cauliflower rice with the shredded mozzarella, Parmesan cheese, egg, garlic powder, onion powder, oregano, salt, and pepper. Mix until well combined.
2. Form the crust:
Spread the cauliflower mixture evenly onto the prepared sheet pan, pressing it into a rectangle or square shape to form a crust about 1/4-inch thick.
Bake the crust in the preheated oven for 15-20 minutes, or until the edges are golden brown and the crust is firm.
