Ingredients
Puff Pastry: 500 g
Cottage Cheese: 300 g
Apples: 2, grated
Sugar: 3 tablespoons
Starch: 1 tablespoon
Egg: 1 (for egg wash)
Topping and Garnish:
1 apple, thinly sliced
Cranberries (as desired)
Sugar (for sprinkling)
Black leaf tea (for serving)
Directions
Preheat Oven:
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
Prepare the Filling:
In a mixing bowl, combine grated apples, cottage cheese, sugar, and starch. Mix until well combined.
Roll Out the Pastry:
Roll out the puff pastry on a floured surface. Cut into 8 equal squares or rectangles.
Assemble the Pockets:
Spoon a generous amount of the apple and cottage cheese mixture onto the center of each puff pastry square.
Fold the pastry over to form a triangle or rectangle, and seal the edges by pressing them with a fork.
Egg Wash and Topping:
Beat the egg and brush it over the tops of the pastry pockets.
Arrange thin apple slices and a few cranberries on top for garnish, and sprinkle with sugar.
Bake:
Place the pastry pockets on the prepared baking tray and bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.
Cool and Serve:
Allow the pockets to cool slightly before serving with a hot cup of black leaf tea.
