  • 1 1/2 cups oat flour (you can make your own by blending rolled oats into a fine powder)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil (melted) or any neutral vegetable oil
  • 1/4 cup maple syrup or agave syrup
  • 1 tablespoon vanilla extract
  • 2 tablespoons almond butter or any nut/seed butter
  • 1/2 cup dairy-free chocolate chips (or chopped dark chocolate)
  • 1-2 tablespoons plant-based milk (almond, soy, or oat milk)

Instructions:

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the Dry Ingredients

  • In a medium bowl, whisk together the oat flourbaking soda, and salt until well combined.

Step 3: Combine the Wet Ingredients

  • In a separate bowl, mix the melted coconut oilmaple syrupvanilla extract, and almond butter until smooth and well combined.

Step 4: Combine Wet and Dry Ingredients

  • Add the wet mixture to the dry ingredients. Stir well until a thick dough forms.
  • If the dough is too dry, add 1-2 tablespoons of plant-based milk to reach the desired consistency. The dough should be soft but not too sticky.
