1. Start by peeling the bananas and slicing them into 1/2-inch thick rounds.
2. Place the banana slices onto a parchment-lined baking sheet and freeze for at least 1 hour or until solid.
3. While the bananas are freezing, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth and fully melted.
4. Remove the banana slices from the freezer and quickly dip each one into the melted chocolate, allowing any excess chocolate to drip off.
5. If you’d like, you can immediately sprinkle the chocolate-covered banana bites with chopped nuts, shredded coconut, or sprinkles for added texture and flavor.
6. Place the coated banana bites back onto the parchment-lined baking sheet and return them to the freezer for another 30 minutes or until the chocolate is set.
7. Once the chocolate has hardened, transfer the banana bites to an airtight container and store them in the freezer until you’re ready to enjoy!
Variations & Tips
Feel free to get creative with this recipe! Try using white chocolate or milk chocolate for a different taste. You could also drizzle the banana bites with peanut butter or caramel sauce before freezing for an extra layer of flavor. If you’re looking to add some extra protein, consider dipping the banana slices in Greek yogurt before freezing. For a vegan option, be sure to use dairy-free chocolate chips and keep the toppings simple with things like chia seeds or cacao nibs.
