Brown the beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the beef pieces in batches, searing each side until browned. This step adds flavor and depth to the dish. Transfer the browned beef to your slow cooker.
Sauté the onions and garlic: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute. Transfer the onion and garlic to the slow cooker with the beef.
Prepare the sauce: In a medium bowl, combine the beef broth, Worcestershire sauce, soy sauce, dried thyme, and black pepper. Stir until well mixed, then pour over the beef and onion mixture in the slow cooker.
Cook: Cover the slow cooker with its lid and cook on low for 7-8 hours or on high for 3-4 hours, until the beef is tender and flavorful.
Thicken the sauce: In a small bowl, mix the cornstarch with cold water to create a slurry. About 30 minutes before serving, stir the slurry into the slow cooker, cover, and let it cook until the sauce has thickened.
