Instructions:

Step 1: Prepare the Steak and Vegetables

  1. Slice the flank steak against the grain into thin strips, about 1/4-inch thick. This will help ensure the steak is tender.
  2. Slice the onion and bell peppers into thin strips, making them easy to stir-fry.
  3. Mince the garlic and ginger finely for the sauce.

Step 2: Marinate the Steak

  1. In a small bowl, mix 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 teaspoon black pepper, and 1 tablespoon water.
  2. Add the sliced steak to the bowl and toss it in the marinade. Let it sit for at least 15 minutes. If you have extra time, marinate for up to 30 minutes for more flavor.

Step 3: Cook the Vegetables

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the onion and bell peppers to the pan. Stir-fry for about 3-4 minutes until they are tender-crisp and just starting to brown.
  3. Remove the vegetables from the pan and set them aside.

Step 4: Sear the Steak

  1. In the same pan, add 1 tablespoon of vegetable oil and heat over medium-high heat.
  2. Add the marinated steak to the hot pan, and stir-fry for 3-5 minutes until the steak is browned and cooked through. Make sure not to overcrowd the pan; you can cook the steak in batches if needed.

Step 5: Combine Everything

  1. Once the steak is cooked, return the onions and bell peppers to the pan.
  2. Add minced garlic and ginger, and stir to combine everything. Stir-fry for another 1-2 minutes until the garlic becomes fragrant.
  3. If you want a thicker sauce, mix 1 teaspoon of cornstarch with a little water and add it to the pan. Let the sauce simmer until it thickens to your liking.

Step 6: Add the Finishing Touches

  1. Stir in crushed red pepper flakes (if using) for extra heat.
  2. Drizzle 1 teaspoon of sesame oil (optional) for a nutty flavor.
  3. Taste and adjust the seasoning by adding more soy sauce or pepper if needed.

Step 7: Serve and Garnish

  1. Serve the sizzling pepper steak hot, directly from the pan, on a sizzling plate (if available) for extra drama.
  2. Garnish with chopped green onions and a sprinkle of black pepper. Serve with steamed rice or noodles for a complete meal.
