Directions
1. Preheat your oven to 375°F (190°C).
2. Roll out the pie crust and fit it into a 9-inch pie dish. Trim and crimp the edges as desired.
3. In a bowl, mix the strawberry jam, fresh strawberries, cornstarch, granulated sugar, and vanilla extract until well combined.
4. Pour the strawberry filling into the pie crust.
5. Lightly brush the edges of the crust with the beaten egg and sprinkle with coarse sugar if using.
6. Bake in the preheated oven for 45-50 minutes, or until the crust is golden and the filling is bubbly.
7. Remove from oven and let cool on a wire rack.
8. While the pie cools, prepare the icing by whisking together powdered sugar, milk, and vanilla extract until smooth. Adjust the milk as needed to achieve a thick but pourable consistency.
9. Once the pie has cooled, drizzle the icing over the top and add sprinkles for decoration if desired.
10. Allow the icing to set before serving.
