Ingredients
For the Chicken:

1 whole chicken (4-5 lbs / 1.8-2.3 kg), patted dry
2 tbsp olive oil
1 tbsp unsalted butter, softened
2 lemons, one halved, one zested and juiced
4 garlic cloves, minced
1 tbsp fresh rosemary, chopped (or 1 tsp dried)
1 tbsp fresh thyme, chopped (or 1 tsp dried)
1 tsp salt
1/2 tsp freshly ground black pepper
For the Glaze:

1/4 cup (60ml) fresh lemon juice
2 tbsp honey
1 tbsp olive oil
1 tsp Dijon mustard
1/2 tsp garlic powder
1 tsp fresh parsley, chopped (optional, for garnish)
Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Place a roasting rack in a roasting pan, or line a baking dish with foil for easy cleanup.
Step 2: Prepare the Chicken
In a small bowl, combine olive oil, butter, garlic, rosemary, thyme, lemon zest, salt, and pepper to create an herb paste.
Carefully loosen the skin over the chicken breast by sliding your fingers underneath it. Spread half of the herb paste under the skin, massaging it evenly over the breast meat.
Rub the remaining herb paste over the exterior of the chicken.
Squeeze the juice of half a lemon inside the cavity of the chicken, then place the squeezed lemon half inside along with a sprig of rosemary or thyme (optional).
Step 3: Roast the Chicken
Truss the chicken legs with kitchen twine (optional, for even cooking).
Place the chicken breast-side up on the roasting rack or in the baking dish.
Roast for 1 hour, basting with pan juices every 20 minutes to keep the skin moist and flavorful.
Step 4: Prepare the Lemon Glaze
While the chicken roasts, combine lemon juice, honey, olive oil, Dijon mustard, and garlic powder in a small saucepan.
