Instructions:
1. Prepare the Base
1. Heat oil or ghee in a pressure cooker or large pot.
2. Add cumin seeds, cloves, cardamom, bay leaf, and cinnamon. Sauté for 30 seconds until aromatic.
3. Add sliced onions and sauté until golden brown.

2. Add the Spices
1. Stir in ginger-garlic paste and cook until the raw smell disappears.
2. Add tomatoes, turmeric, red chili powder, and coriander powder. Cook until the oil separates from the masala.

3. Cook the Mutton
1. Add the mutton pieces and green chilies. Sauté for 6-8 minutes until well-coated with the masala.
2. Mix in whisked yogurt and cook for another 5 minutes.

4. Pressure Cook
1. Add 1 cup of water and salt. Mix well.
2. Pressure cook for 3-4 whistles (or until the mutton is tender). If using a pot, cover and simmer on low heat until the mutton is soft.

5. Final Touch
1. Sprinkle garam masala and simmer for 5 minutes.
2. Garnish with fresh coriander leaves.
