Decadent Hot Chocolate Pancakes for Breakfast Bliss

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is lightly browned.
Remove the pancakes from the skillet and top each with mini marshmallows while they’re still hot.
Serve the pancakes with whipped cream and a drizzle of chocolate syrup.
