- Prepare the courgettes:
- Preheat your oven to 200°C (400°F).
- Heat the olive oil in a pan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Add the sliced courgettes to the pan. Season with salt, pepper, and thyme. Cook for about 5-7 minutes, stirring occasionally, until they soften and release their moisture. Set aside to cool.
- Prepare the puff pastry:
- Roll out the puff pastry sheet on a baking tray lined with parchment paper.
- If you want a more rustic look, you can leave the edges of the pastry slightly raised to create a border, but this is optional.
- Assemble the flatbread:
- Spread the cooked courgettes evenly over the puff pastry, leaving a small border at the edges.
- If using, sprinkle crumbled feta cheese over the courgettes. You can also add a bit of grated Parmesan for extra flavor.
- Optionally, sprinkle sesame seeds on top for a bit of crunch.
- Bake:
- Brush the edges of the pastry with the beaten egg to give it a golden finish.
- Place the flatbread in the preheated oven and bake for 15-20 minutes or until the pastry is golden and crispy.
- Serve:
- Remove from the oven and let it cool slightly before slicing.
- Serve warm as a snack or appetizer.
Tips:
- Add other toppings: You can also add a few cherry tomatoes, olives, or even a drizzle of balsamic glaze for extra flavor.
- Make it vegetarian: Skip the feta cheese if you want a lighter option, or swap it for a plant-based cheese.
