- 2 tablespoons fresh rosemary, finely chopped

- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons prepared horseradish
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and pepper, to taste
🍖 Instructions
1. Prepare the Prime Rib:
- Preheat your oven to 450°F (230°C).
- Pat the prime rib roast dry with paper towels to remove excess moisture.
- In a small bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
- Rub the prime rib all over with the herb and spice mixture, ensuring it’s evenly coated.
- In a separate small bowl, combine Dijon mustard and horseradish. Spread this mixture over the seasoned prime rib, creating a flavorful coating.
2. Roast the Prime Rib:
- Place the prime rib on a rack in a roasting pan, bone-side down.
- Roast the prime rib in the preheated oven for 15 minutes at 450°F (230°C).
- Reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5-2 hours (depending on the size of the roast and desired doneness). For medium-rare, aim for an internal temperature of 125°F (52°C).
- Once the prime rib reaches the desired temperature, remove it from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute, ensuring a juicy and tender roast.
3. Make the Horseradish Sauce:
- In a bowl, combine sour cream, mayonnaise, horseradish, Dijon mustard, and lemon juice.
- Season with salt and pepper to taste, then mix until smooth and well combined.
