Prepare the Pecans: Line a baking sheet with parchment paper. Arrange pecan halves in clusters of 3-4 pecans each.
Make the Caramel: In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave in 20-second intervals, stirring in between, until smooth. Drop about 1 teaspoon of melted caramel over each pecan cluster. Let it cool for 10-15 minutes.
Melt the Chocolate: In another microwave-safe bowl, melt the chocolate in 20-30 second intervals, stirring after each interval, until smooth.
Coat the Clusters: Spoon about 1 tablespoon of melted chocolate over each caramel-pecan cluster. Sprinkle with sea salt if desired.
Set the Clusters: Allow the clusters to cool completely. You can refrigerate them for about 20 minutes to speed up the process.

Toasting Pecans: For extra flavor, toast the pecans at 350°F (175°C) for 8-10 minutes before using.
Caramel Consistency: If the caramel is too thick, add an extra teaspoon of heavy cream and microwave for a few more seconds.
