Baked Apple Fritters

Instructions:

1. Prep the Apples:

  • Peel and dice the apples into small cubes (about 1/4 inch). Toss them with lemon juice to prevent browning. Set aside.

2. Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

3. Mix the Dry Ingredients:

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

4. Prepare the Wet Ingredients:

  • In a separate bowl, whisk the eggs, milk, vanilla extract, and melted butter until smooth.

5. Combine:

  • Gradually add the wet ingredients to the dry ingredients. Stir until just combined. The batter will be thick.
  • Gently fold in the diced apples until evenly distributed.

6. Form the Fritters:

  • Using a spoon or ice cream scoop, drop mounds of batter onto the prepared baking sheet. Leave space between each fritter as they will expand slightly.

7. Bake:

  • Bake for 18-22 minutes or until the fritters are golden brown and a toothpick inserted comes out clean.
