Directions:
- Preheat oven to 350°F (175°C).
In a large bowl, mix flour, sugar, and baking soda.
Add in the eggs, crushed pineapple with its juice, and pecans (if using). Stir just until moistened. - Pour the batter into a buttered 9×13-inch baking pan.
Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely.
Icing:
In a medium bowl, combine cream cheese, butter, confectioners sugar, and vanilla.
Beat until smooth and creamy.
Frost the cooled cake using all the frosting.
