Stuffed Spaghetti Squash with Broccoli, Spicy Italian Sausage, and Cheddar Cheese

Ingredients:

  • 1 medium spaghetti squash, halved and seeds removed
  • 2 cups broccoli florets
  • 1 pound spicy Italian turkey sausage, casings removed
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Preheat your oven to 400°F (200°C).

Prepare the Spaghetti Squash:

Drizzle olive oil over the cut sides of the spaghetti squash. Season with salt, pepper, and garlic powder.
Place the squash halves, cut side down, on a baking sheet lined with parchment paper.
Roast for about 30-40 minutes, or until the squash is tender and easily pierced with a fork.
