honey roasted cashews
Remember how I said I was a serial snacker the other day? Well, it’s true. And the recent road trip sure helped to reestablish that! When you are driving across the country in a week, don’t have a lot of room for food, and still don’t want to stop a million times along the way, you try to find some healthy ideas that won’t totally bore you after the first two hours.
I shared these honey roasted cashews a little while back on Capturing Joy with Kristen Duke, and I wanted to make sure to include them here for the recipe index. These are THE EASIEST snack to make. And despite some weird belief that cashews and other nuts are bad for you (yes, I’ve actually heard and read people that claim such – say what?) they are GOOD FOR YOU. They are full of antioxidants and contain other trace minerals. I swear, I read this on wiki – RELIABLE. 😉 (You know, one day I’m just gonna read about all of our raw food ingredients on wiki – it’s kind of amazing to learn about the origins of what we eat!)
These honey roasted cashews are sooooo easy to make. Basically just have to coat with a little honey and butter to roast. Then when done, toss in a little salt and sugar. If you are feeling adventurous, you can add vanilla extract (although this will mask most of the honey flavor), and why not even go a little bit of cinnamon?
Easy Honey Roasted Cashews
Ingredients
- 4-5 cups whole raw cashews
- 2 tablespoons plus 1 teaspoon honey
- 1 tablespoon unsalted butter
- 1/4 cup granulated sugar
- salt to taste
