Garlic Shrimp Pasta

Instructions:


Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package directions, until al dente (usually about 8-10 minutes).
  3. Reserve 1/2 cup of pasta water before draining, then drain the pasta and set aside.

Step 2: Cook the Shrimp

  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.
  2. Add the shrimp to the skillet in a single layer.
  3. Cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Season the shrimp with salt and pepper.

Step 3: Make the Garlic Sauce

  1. In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter.
  2. Add the minced garlic and cook for about 1 minute, stirring constantly to prevent burning.
  3. Add the red pepper flakes (if using) and cook for an additional 30 seconds.
  4. Pour in the chicken broth (or white wine), scraping any bits off the bottom of the skillet. Let it simmer for about 2-3 minutes to reduce slightly.
  5. Stir in the heavy cream, Parmesan cheese, lemon juice, and reserved pasta water. Simmer for another 2-3 minutes until the sauce thickens slightly.

Step 4: Combine Pasta and Shrimp

  1. Add the cooked pasta to the skillet, tossing to coat in the creamy garlic sauce.
  2. Return the shrimp to the skillet and mix everything together.
  3. Season with additional salt and pepper to taste.

Step 5: Serve

  1. Garnish with fresh chopped parsley and extra Parmesan cheese, if desired.
  2. Serve immediately and enjoy your Garlic Shrimp Pasta!
