Instructions:
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package directions, until al dente (usually about 8-10 minutes).
- Reserve 1/2 cup of pasta water before draining, then drain the pasta and set aside.
Step 2: Cook the Shrimp
- In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.
- Add the shrimp to the skillet in a single layer.
- Cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
- Season the shrimp with salt and pepper.
Step 3: Make the Garlic Sauce
- In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter.
- Add the minced garlic and cook for about 1 minute, stirring constantly to prevent burning.
- Add the red pepper flakes (if using) and cook for an additional 30 seconds.
- Pour in the chicken broth (or white wine), scraping any bits off the bottom of the skillet. Let it simmer for about 2-3 minutes to reduce slightly.
- Stir in the heavy cream, Parmesan cheese, lemon juice, and reserved pasta water. Simmer for another 2-3 minutes until the sauce thickens slightly.
Step 4: Combine Pasta and Shrimp
- Add the cooked pasta to the skillet, tossing to coat in the creamy garlic sauce.
- Return the shrimp to the skillet and mix everything together.
- Season with additional salt and pepper to taste.
Step 5: Serve
- Garnish with fresh chopped parsley and extra Parmesan cheese, if desired.
- Serve immediately and enjoy your Garlic Shrimp Pasta!
