Cowboy Meatloaf and Potato Casserole

1️⃣ Prepare the Meatloaf Mixture

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, ketchup, and Worcestershire sauce. Mix until evenly combined.
  3. Press the meat mixture into the bottom of a greased 9×9-inch baking dish.

2️⃣ Cook the Potatoes

  1. Boil the diced potatoes in salted water until fork-tender (about 10-15 minutes). Drain well.
  2. Mash the potatoes with milk, butter, garlic powder, salt, and pepper until smooth and creamy.

3️⃣ Assemble the Casserole

  1. Spread the mashed potatoes evenly over the meatloaf layer.
  2. Sprinkle shredded cheddar cheese on top for a golden, cheesy crust.

4️⃣ Bake and Serve

  1. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  2. Let it cool for 5 minutes before serving.
