  1. Prepare the Pecans: Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet in a single layer. Toast in the oven for about 5-7 minutes, or until fragrant and lightly browned. Watch them closely to prevent burning. Remove from the oven and let cool.
  2. Make the Caramel: In a medium saucepan, combine the granulated sugar and butter over medium heat. Stir continuously until the mixture is melted and smooth.
  3. Add Cream and Salt: Slowly add the heavy cream and salt to the caramel mixture, stirring constantly. Continue to cook for another 2-3 minutes until the caramel is thickened and smooth. Remove from heat and stir in the vanilla extract.
  4. Assemble the Turtles: Line a baking sheet with parchment paper or a silicone baking mat. Place clusters of toasted pecans (about 3-4 pecan halves per cluster) on the lined baking sheet.
  5. Add Caramel: Spoon a small amount of the caramel over each cluster of pecans, making sure to cover them but leaving a bit of pecan showing. Let the caramel set slightly.
  6. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until completely smooth and melted. Alternatively, you can melt the chocolate using a double boiler.
  7. Top with Chocolate: Drizzle or spoon melted chocolate over each caramel-pecan cluster, covering them partially or completely as you prefer.
  8. Let Set: Allow the chocolate to set at room temperature or place the baking sheet in the refrigerator to speed up the process.
  9. Serve: Once the chocolate is set, your Turtle Candies are ready to enjoy!
