Luscious Strawberry Lemon Cheesecake

Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
In a large bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon juice, and lemon zest. Fold in the sliced strawberries.
Pour the cheesecake filling over the crust and bake for 50-60 minutes until set.
Once cooled, top with whipped cream, fresh strawberries, and lemon zest.
