Instructions:
1. Prepare the Filling:
- Heat a skillet over medium heat and cook the ground beef until browned, breaking it apart with a spatula.
- Add the chopped onion and garlic. Cook for 3-4 minutes until softened.
- Stir in Worcestershire sauce, paprika, salt, and pepper. Cook for another minute.
- Remove from heat and stir in ketchup, mustard, and pickle relish. Let it cool slightly.
- Fold in the shredded cheddar cheese until it melts into the warm beef mixture.
2. Make the Dough (Skip if Using Pre-Made Dough):
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the cold cubed butter and use your fingers to rub it into the flour until the mixture resembles coarse crumbs.
- Gradually pour in the milk and mix until a dough forms. Transfer to a floured surface and knead gently for 1-2 minutes.
- Roll out the dough to about ¼ inch thick. Cut into 8-10 squares or circles, depending on how large you want the pockets.
3. Assemble the Pockets:
- Preheat your oven to 375°F (190°C).
- Place a spoonful of the beef mixture onto one half of each dough square. Add half a slice of American cheese on top of the filling.
- Fold the dough over the filling and press the edges with a fork to seal tightly.
- Brush the tops with beaten egg and sprinkle sesame seeds for that burger-like finish.
4. Bake:
- Arrange the pockets on a baking sheet lined with parchment paper.
- Bake for 18-22 minutes or until the tops are golden brown.
- Let them cool slightly before serving – the cheese inside will be hot!
Dipping Sauces:
- Classic: Ketchup and mustard.
- Fancy: Garlic aioli or chipotle mayo.
- Spicy: Buffalo sauce or sriracha.
