Ingredients:

  • 4 bone-in or boneless pork chops
  • 4 large potatoes, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: In a large bowl, toss the potato wedges with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper until evenly coated.
  3. Arrange the Potatoes: Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Season the Pork Chops: Brush the pork chops with the remaining 1 tablespoon of olive oil and season both sides with salt and pepper.
  5. Arrange the Pork Chops: Place the pork chops on top of the potatoes on the baking sheet.
  6. Bake: Bake in the preheated oven for 35-45 minutes, or until the potatoes are tender and the pork chops reach an internal temperature of 145°F (63°C). Flip the pork chops halfway through the baking time to ensure even cooking.
  7. Rest and Serve: Let the pork chops rest for a few minutes before serving. Garnish with chopped fresh parsley if desired.
