Steak and Cheese Garlic Toast
This decadent dish combines perfectly seared steak, gooey melted cheese, and crispy, buttery garlic toast. It’s a satisfying meal for any occasion, from a casual lunch to an indulgent dinner.
Ingredients
For the Garlic Toast:
- 4 slices of thick-cut bread (sourdough, ciabatta, or brioche)
- 4 tablespoons unsalted butter, softened
- 2 garlic cloves, finely minced
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon grated Parmesan cheese (optional)
For the Steak:
- 2 ribeye or sirloin steaks (approximately 1 inch thick)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper (to taste)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
For the Cheese Topping:
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 1/4 cup crumbled blue cheese (optional, for added tang)
Instructions
1️⃣ Prepare the Garlic Butter
- In a small bowl, combine softened butter, minced garlic, parsley, and Parmesan cheese. Mix until smooth.
- Spread a generous layer of the garlic butter on one side of each bread slice.
2️⃣ Toast the Bread
- Preheat a skillet or grill pan over medium heat. Place the bread buttered-side down in the pan.
- Toast until golden brown and crispy, about 2-3 minutes. Flip and lightly toast the other side. Set aside on a plate.
3️⃣ Season the Steaks
- Pat the steaks dry with paper towels to ensure a good sear.
- Rub the steaks with olive oil, then season both sides generously with salt, pepper, garlic powder, and smoked paprika.
4️⃣ Cook the Steaks
- Heat a heavy skillet or grill pan over high heat. Add a small amount of oil to the pan.
- Once the oil is shimmering, place the steaks in the pan. Cook for 3-4 minutes on each side for medium-rare, or longer depending on your desired doneness.
- Remove the steaks from the pan and let them rest for 5-10 minutes to retain their juices.

- After resting, slice the steaks thinly against the grain. This keeps the meat tender and easy to bite into.
6️⃣ Assemble the Toasts
- Preheat your oven’s broiler to high.
- Place the toasted bread slices on a baking sheet.
- Arrange the sliced steak evenly over the bread slices.
- Top each toast with a mix of mozzarella, cheddar, and blue cheese (if using).
7️⃣ Melt the Cheese
- Place the baking sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning!
8️⃣ Serve and Enjoy
- Remove the toasts from the oven and sprinkle with a bit of fresh parsley for color.
- Serve immediately while the cheese is gooey and the steak is warm. Pair with a crisp side salad or roasted veggies for a complete meal.
