This decadent dish combines perfectly seared steak, gooey melted cheese, and crispy, buttery garlic toast. It’s a satisfying meal for any occasion, from a casual lunch to an indulgent dinner.


Ingredients

For the Garlic Toast:
  • 4 slices of thick-cut bread (sourdough, ciabatta, or brioche)
  • 4 tablespoons unsalted butter, softened
  • 2 garlic cloves, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon grated Parmesan cheese (optional)
For the Steak:
  • 2 ribeye or sirloin steaks (approximately 1 inch thick)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
For the Cheese Topping:
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup crumbled blue cheese (optional, for added tang)

Instructions

1️⃣ Prepare the Garlic Butter

  1. In a small bowl, combine softened butter, minced garlic, parsley, and Parmesan cheese. Mix until smooth.
  2. Spread a generous layer of the garlic butter on one side of each bread slice.

2️⃣ Toast the Bread

  1. Preheat a skillet or grill pan over medium heat. Place the bread buttered-side down in the pan.
  2. Toast until golden brown and crispy, about 2-3 minutes. Flip and lightly toast the other side. Set aside on a plate.

3️⃣ Season the Steaks

  1. Pat the steaks dry with paper towels to ensure a good sear.
  2. Rub the steaks with olive oil, then season both sides generously with salt, pepper, garlic powder, and smoked paprika.

4️⃣ Cook the Steaks

  1. Heat a heavy skillet or grill pan over high heat. Add a small amount of oil to the pan.
  2. Once the oil is shimmering, place the steaks in the pan. Cook for 3-4 minutes on each side for medium-rare, or longer depending on your desired doneness.
  3. Remove the steaks from the pan and let them rest for 5-10 minutes to retain their juices.

  1. After resting, slice the steaks thinly against the grain. This keeps the meat tender and easy to bite into.

  1. Preheat your oven’s broiler to high.
  2. Place the toasted bread slices on a baking sheet.
  3. Arrange the sliced steak evenly over the bread slices.
  4. Top each toast with a mix of mozzarella, cheddar, and blue cheese (if using).

7️⃣ Melt the Cheese

  1. Place the baking sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning!

  1. Remove the toasts from the oven and sprinkle with a bit of fresh parsley for color.
