1. Prepare the Crunch Layer

  1. In a large saucepan, melt the butter, brown sugar, and honey (or corn syrup) over medium heat. Stir occasionally until the mixture comes to a boil.
  2. Once boiling, let it cook for 1–2 minutes, allowing the sugar to dissolve and the mixture to thicken slightly.
  3. Remove from heat and immediately stir in the crispy rice cereal until well-coated.
  4. Line an 8×8-inch baking pan with parchment paper for easy removal. Transfer the cereal mixture into the pan and press it down evenly with a spatula or the back of a spoon. Set aside to cool while you prepare the caramel.

2. Make the Caramel Layer

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the brown sugar, heavy cream, vanilla extract, and salt. Stir continuously until the mixture comes to a simmer.
  3. Let it simmer for 2–3 minutes, stirring constantly, until it thickens slightly and the sugar has dissolved.
  4. Pour the hot caramel sauce evenly over the crunchy cereal layer. Use a spatula to spread it out to cover every inch of the bars. Allow it to cool and set for about 20–30 minutes at room temperature.

3. Prepare the Chocolate Layer

  1. In a microwave-safe bowl, combine the semi-sweet chocolate chips and butter. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth and completely melted.
  2. Stir in the vanilla extract for extra flavor.
  3. Pour the melted chocolate over the cooled caramel layer, spreading it evenly to cover the entire surface. Tap the pan gently on the counter to smooth out the chocolate and eliminate any air bubbles.

4. Chill and Serve

  1. Refrigerate the bars for at least 1–2 hours, or until the chocolate has fully set and the bars are firm.
