Instructions:

Seal meatloaf: Fold meat mixture over the cheese and liquid filling, ensuring no gaps.
Prepare potatoes: Toss chopped potatoes with olive oil, salt, and pepper.
Arrange in baking dish: Place meatloaf in a greased baking dish and surround with potatoes.
Bake: Bake for 40 minutes, then remove parchment paper and bake for an additional 10-15 minutes or until cooked through and browned.
Rest and serve: Let meatloaf rest for 5-10 minutes before slicing and serving with roasted potatoes.
