ZUCCHINI GRATIN WITH YELLOW SQUASH

Ingredients:

  • 4 medium zucchinis, thinly sliced
  • 4 medium yellow squashes, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

Step 1: Prepare the Squash

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the sliced zucchinis and yellow squashes to the skillet. Cook, stirring occasionally, until the squash is tender and slightly caramelized, about 8-10 minutes. Season with salt and pepper to taste.
